    This is a delicious recipe and a healthier take on one of
    my childhood favorite meals, potato pancakes. I served these up
    with a side of applesauce and sour cream (my favorite) but my
    children chose their age old favorite of dipping in ketchup. I was
    impressed how easy these were to whip up with a food processor. The
    prep time was cut down to about 5-7 minutes. If you have a mandolin
    with a grater attachment in may also be faster than hand grating if
    you don't have a food processor.
