Today marks the 4th week of Seasonal Sundays! Time is Flying and to be honest Im grateful. As each week passes I see the light at the end of the freezing tunnel.. SPRING. :) But to get myself through our most recently bitterly cold temps (single digits this week) I keep my focus on my favorite thing- (Food!) This past week I have been indulging in Clementines. Can't seem to get enough of them. I always find it comical that they are in season now - as their tropical flavor makes me think of summer. Perhaps these delightful citrusey fruits are natures way of reminding us of the Sunny & Balmy days to come.

This week I would like to highlight a Blogger that I recently started to follow. Her name was drawn for last weeks Angell Bar Chocolate Giveaway- and I found myself drawn to her site multiple times this week. May I introduce to you Heather from Gluten-Free Cat. She writes some fantastic recipes! Beyond recipes her site is filled to the brink with great information. Last week she submitted to Seasonal Sundays a Green Mango Coconut Milk Smoothie that very quickly grabbed my attention! Go check it out.

This week.. I'm sad to say that my submission is coming from the archives. I have had one of those Gluten Free non-stop failure baking weeks. Maddening? Yes. But its the nature of the beast- and I have found I learn so much after these dry spells- and always pull through with a recipe I never thought possible. This week I WAS going to have prepared to share a Gorgeous 3 Layer Beet Cake. Fail. Then today I attempted a Clementine Cake. Fail Again. For whatever reason cake without Eggs, Gluten, Dairy, Soy and Refined Sugar is tough. Perhaps its my high personal standards and the distant memories of the mile high rich and moist cakes I once made.. I'll get there again.

So for this week- I'm sharing an oldie but a goodie!

Gluten Free/Vegan Butternut Squash Potato Gnocchi

Making gnocchi is one of my favorite things to do. It was one of the first things I learned to make homemade. I highly recommend pulling out an apron and giving these a shot!

    I found your site from a comment you made on another blog. Hubby and I don't eat totally gluten or dairy free, but we are trying to make healthier food choices these days. I've found that many of our healthy choices naturally end up being both gluten and dairy free. :) I've linked up some sweet potato chili today- hope it fits the bill!

I also LOVE seasonal foods! I've been munching on clementines also for the past month or so, and have a great dessert salad recipe you'll love. I'll try to make it this weekend to share.
