Gluten Free or Paleo Oatmeal Cream Pies!



I didn't want anyone to miss out on this! SO- I made these cream pies two ways- with oats or quinoa flakes- OR totally grain free. Pick your poison!! All three versions are AMAZING!

    Good flavor not a fan of the quinoa flakes in the recipe ill try the paleo one next. Is there an alternative cream center so I can not use so much honey or maple syrup? thanks

    Paleo ones were awesome! Some how I screwed up the middle? I followed directions but it never got thick. So I put it in the fridge and whipped it again and that seemed to work?? I don’t know if that is how it is supposed to be or not? Bit the cookie was nailed!!! Amazing

    I made the paleo version of these and they were a hit with the whole family. Kids are enjoying the treat packed in their lunches. Thank you for the great recipe

    The cookies are crunchy, not chewy. And the filling is more like marshmallow fluff. Hmmmm… not sure why. I made the gluten free version and used the gram measurements on a scale. Maybe if I put them in the fridge overnight?

    The texture gets better if you leave them out on the counter. They became more chewy and less crunchy. Putting them in the fridge makes them harder. So, just leave them out. They won’t last long anyway, so no worries. 🙂 I still don’t know what happened to the filling – I think I’ll try using the powdered sugar frosting recipe next time, and they’ll be pretty close to perfect! Thanks Brittany for such a yummy recipe!

    What kind of oil would you use for the Paleo version? I don’t like using ghee for baking (tastes weird to me) and I’m not sure what other kind of dairy free butter to use!

    You could use macadamia oil or coconut oil. They both taste great in cookies
