Dairy & Sugar Free Peppermint Bark!

So the holiday season is upon us and that means one thing...buckets and buckets of cookies, candies and other sugary treats! My mind is excited and my gut is fearfully happy. We shall see how this season goes, I predict it will be full of utterly delicious baking madness, but thats just me. I'm kicking the season off right with some easy peasy peppermint bark, which I just love!

This recipe can be made with regular white chocolate chips melted (one bag) OR you can use my Dairy /White Chocolate Recipe! Same goes for the chocolate chips- use a bag of store bought or make dairy/sugar free  recipe!

Lets talk Candy Canes. Most candy canes are made out of two things I do not recommend indulging in: Corn Syrup and Artificial Dye! Ick.

I did some research and found 3 better options available:

  • Trader Joes sells peppermint candies made out of Cane Sugar, Brown Rice Syrup and natural vegetable dyes.
  • Whole foods sells (I believe candy canes) also made out of Cane Sugar and natural vegetable dyes.
  • The company Surf Sweets makes and sells Organic Candy Canes online. Their ingredients include: Cane Juice, Brown Rice Syrup, Natural Peppermint flavor & Fruit Juice. Their candy canes are produced on a certified gluten free line.
  • I found Sugar Free Peppermint Candies made out of xylitol. (Dr. Johns Sugar Free Peppermint Xylitol Disks). They are gluten free & GMO free.

Holiday Peppermint Bark

Ingredients

Instructions

  1. Make my dark chocolate or melt a 10 oz bag of dark chocolate.
  2. Spread over a cookie sheet lined with parchment paper.
  3. Place in freezer until it hardens.
  4. Crush candy canes.
  5. Make my white chocolate or melt a 10 oz. bag of white chocolate.
  6. Pour white chocolate over the hardened dark chocolate.
  7. Sprinkle generously with crushed candy canes.
  8. Place in freezer until it hardens.
  9. Cut pieces and enjoy!

    I love you! The kitchen at work has turned into a sugar/grain/corn syrup/popcorn pit and I'm finding it harder and harder to resist the boxes of Williams-Sonoma Peppermint Bark. This right here will be the thing that saves my gut this season!
